Pink Sauce (Beetroot) Pasta

The beautiful pink sauce of this pasta is a perfect blend of delicious red and thick and creamy white sauce. Came together in just 20 minutes and contains not a single unhealthy ingredient.

At first, I was little sceptical of how this recipe will turn out because this recipe consists of just a few simple ingredients i.e. beetroots and few cashew nuts. But to my surprise, this pasta turns out so good that while having it I have the feel of having heavy white sauce pasta which is pink in colour. You can make this recipe with whole wheat pasta to make the healthiest version of any pasta recipe out there.

  1. In a pressure cooker or in a pan peel and cut the beetroots and cover it with water. and boil until soft. Once cooked, puree it in a mixture or blender with one tablespoon olive oil.

  2. Boil 5 cups of water in a deep pan and add salt to it.
  3. Add pasta to the boiled water and cook for around 6-8 minutes.
  4. Check by pressing pasta with finger or by tasting whether it is cooked or not.
  5. Wash the cooked pasta under the running water and after this pour a little extra virgin olive oil over it. Keep aside.
  6. In a small blendor or mixing jar, blend cashew nuts into smooth paste by adding little water into it

  7. Now in a pan heat some olive oil and add chopped onion and minced garlic into it.
  8. When onion gets cooked add beetroot puree into it and cook for around 4-5 minutes.
  9. Add cashew nut puree into this and mix well. You can also add few tablespoons of leftover boiled pasta water into this mix to adjust the consistency.
  10. Add salt, black pepper, and oregano into the mixture. Add pasta into the mixture and give it a good mix.
  11. Serve by garnish this with fresh basil leaves and toasted walnuts.
