For days when the question like “What to cook today?” disturbs you the most, the lemon rice is a perfect solution. This simple, flavorful and exotic recipe of lemon rice is prepared in a few minutes with just a few ingredients.
Different veggies can be added to the same recipe as per your preference. A little bit of nutty and crunchy taste is added in the recipe by adding peanuts or cashew nuts to it. Lemon juice is added at the end of the recipe as per taste.

- 1 cup Rice
- 3 tbsp oil
- 1 tsp mustard seeds
- 1 tbsp split chickpeas chana dal
- 1 tbsp split and skinless black gram lentil yellow urad dal
- 3 tbsp peanuts or cashew nuts
- 6 curry leaves
- 1 green chilli adjust as per taste
- 1 tsp ginger minced
- 1/2 tsp turmeric powder
- 2 lemons adjust as per taste
- 2 tsp salt adjust as per taste
- 2 cups water
- 1 pinch asafoetida hing

- Soak the washed rice in water for about 15 to 30 minutes and then drain the water, rinse the rice and keep aside.
- Now in a pressure cooker add oil and allow it to heat up for a minute. Add the mustard seeds, split chickpeas, split/skinless black lentils and saute it for about 1 to 2 minutes, or once the lentils turn golden in color, also add the peanuts to it and stir-fry.
- Now add the curry leaves, green chilli, ginger, salt and turmeric to it and stir-fry this for around 30 seconds. Now add rice and double the amount of water as compare to the mixture and mix well.
- Close the lid and cook for upto 2 whistles in a pressure cooker on high flame.
- Naturally the pressure will release in 10 minutes, open the lid and release any remaining pressure.
- Pour the lemon juice over rice and mix well. Serve the prepared hot rice with curd, pickle and papad.
I was not expecting this dish to be so hearty from the name. I would be happy to eat this for lunch or dinner.
