Palak Khichdi
  1. First of all, wash well tuvar dal, arhar dal and brown rice. Soak for around half-hour both dal and rice.
  2. After soaking put arhar dal, tuvar dal and rice into the pressure cooker and around 4 cups of water. Add salt to taste and turmeric powder into it. Cook for around 4-5 whistles. Two whistles on high flame and then three whistles on low flame.
  3. Now in a mixer grinder add palak leaves and green chillies and little water and make a smooth paste.
  4. Heat a pan and add 1 tbsp ghee into it. Add bay leaf and cumin seeds to this, and once the seeds start spluttering, add hing, cumin powder, cinnamon stick, green cardamom, cloves, black pepper and whole red chillies, ginger to this. Give this a stir.
  5. Add chopped onion to this. Once the onion starts to turn light brown, add chopped tomatoes to this. Add garam masala and mix well.
  6. Now add pureed palak to this and mix well. Cook for around 4-5 minutes.
  7. Add this cooked puree to cooked dal and brown rice. Mix well and let this cook for around 5 minutes more.
  8. Serve hot with a dollop of ghee and curd. Your homemade satisfying lunch is ready.
